Let's say you sell a range of like 200 candles. Any sort of descriptor that can describe a group of those products should have a collection page cause these descriptors are often what people are searching when they're looking to buy candles. The other way that you can do this is with keyword research, and this is something that I teach in modules 3 and 4 of the SEO Clinic.
Basically, you do the research around your main target keywords to find what people are searching, and you build collections around... Let's say you find out lots of people searching for vanilla scented candles and you sell 10 of those, you would create a collection. And you basically rinse and repeat this process until you have collection pages that can categorise, summarise, and target search terms for all of your products.
